Tip # 74 Shortage of Corn Equals High Meat Prices

As the cost of meat slowly goes up due to the shortage of corn for Ethanol, some may feel a pinch in their food budget. I have been trying to cut back on my meat purchases and still serve meat for dinner. I have found a way!!

I have cut the amount of meat we eat in half. Instead of serving a lot of meat and a little of the side dishes, I have done the opposite. I purchase a whole chicken, roast it, and cut it up to make 3 meals. I also purchase kielbasa and cut it in half to make 2 meals. The key is to add rice, pasta, veggies, or beans in larger quantities. We then have a big bowl of hand made popcorn or muffins for desert. We have also been eating a lot of Spaghetti dinners, as well as Beans & Rice dinners. This helps break up the amount of days we eat meat.

Another great thing to do (if you have a freezer) is to stock up on meat while the prices are still low. Chicken seems to be the cheapest out here, so I will be stocking my freezer over the next several weeks.
